Huai'an is a historic canal city in central Jiangsu, birthplace of Premier Zhou Enlai and one of the four great cradles of Huaiyang cuisine, one of China's most refined culinary traditions. Sitting on the Grand Canal, it has a humid climate transitional between temperate and subtropical. An airport and high-speed rail connect it to Nanjing and Shanghai.
